A simple, complete meal cooked on one sheet pan featuring smoked sausage and potatoes.
Ingredients

- 1 pound kielbasa sausage, sliced
- 1.5 pounds small potatoes, quartered
- 1 large onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- In a large bowl, combine the quartered potatoes, onion wedges, olive oil, oregano, garlic powder, salt, and pepper. Toss until everything is evenly coated.
- Spread the potato and onion mixture in a single layer on a large baking sheet.
- Roast for 15 minutes.
- Remove the pan from the oven and add the sliced kielbasa to the pan, mixing it slightly with the potatoes.
- Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are tender and the sausage is browned.
- Serve immediately.
Notes
- You can substitute sweet potatoes for white potatoes for a different flavor.
- For extra flavor, toss the vegetables with 1 teaspoon of smoked paprika before roasting.
