Description

A simple, complete meal cooked on one sheet pan featuring smoked sausage and potatoes.


Ingredients

  • 1 pound kielbasa sausage, sliced
  • 1.5 pounds small potatoes, quartered
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a large bowl, combine the quartered potatoes, onion wedges, olive oil, oregano, garlic powder, salt, and pepper. Toss until everything is evenly coated.
  3. Spread the potato and onion mixture in a single layer on a large baking sheet.
  4. Roast for 15 minutes.
  5. Remove the pan from the oven and add the sliced kielbasa to the pan, mixing it slightly with the potatoes.
  6. Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are tender and the sausage is browned.
  7. Serve immediately.

Notes

  • You can substitute sweet potatoes for white potatoes for a different flavor.
  • For extra flavor, toss the vegetables with 1 teaspoon of smoked paprika before roasting.
