A simple recipe for chicken and potatoes cooked together on one pan with a sweet and savory honey garlic glaze.

- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1.5 lbs small potatoes (like Yukon Gold or red potatoes), quartered
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the honey, soy sauce, olive oil, minced garlic, Italian seasoning, pepper, and salt to make the glaze.
- Place the chicken pieces and quartered potatoes in a large bowl. Pour about two-thirds of the honey garlic glaze over the chicken and potatoes. Toss well to coat everything evenly.
- Spread the coated chicken and potatoes in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan.
- Bake for 20 minutes.
- Remove the pan from the oven and brush the remaining one-third of the glaze over the chicken and potatoes.
- Return the pan to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the potatoes are tender and slightly browned.
- Garnish with fresh chopped parsley before serving.
Notes
- For crispier potatoes, you can toss them with the oil and seasoning separately before adding the chicken and glaze.
- If you prefer a thicker sauce, you can simmer the reserved glaze in a small saucepan over medium heat for 2-3 minutes until slightly reduced, then drizzle over the finished dish.
