Description

A simple recipe for a complete chicken burrito bowl cooked on a single pan.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup uncooked white rice
  • 1 15-ounce can black beans, rinsed and drained
  • 1 10-ounce can diced tomatoes with green chilies, undrained
  • 1 cup water or chicken broth
  • 1 cup frozen corn
  • Optional toppings: shredded cheese, salsa, sour cream, avocado

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a large oven-safe skillet, combine the chicken pieces, olive oil, and taco seasoning. Toss until the chicken is evenly coated.
  3. Add the uncooked rice, black beans, diced tomatoes with green chilies, and water or broth to the skillet. Stir everything together well.
  4. Bring the mixture to a simmer on the stovetop over medium-high heat.
  5. Once simmering, cover the skillet tightly with a lid or aluminum foil.
  6. Transfer the skillet to the preheated oven and bake for 20 minutes.
  7. Remove the skillet from the oven, stir in the frozen corn, and recover. Return to the oven for another 5 minutes, or until the rice is tender and the liquid is absorbed.
  8. Remove from the oven and let stand, covered, for 5 minutes before serving.
  9. Serve directly from the pan or portion into bowls, adding your desired toppings.

Notes

  • You can substitute brown rice, but you may need to increase the cooking time slightly.
  • For extra flavor, use chicken broth instead of water.
