- 1 lb broccoli florets
- 2 medium carrots, sliced
- 1 red bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- In a large bowl, combine the chicken pieces, broccoli, carrots, and bell pepper.
- Drizzle the olive oil over the chicken and vegetables.
- Sprinkle the oregano, garlic powder, salt, and pepper over the mixture. Toss everything until evenly coated.
- Spread the chicken and vegetable mixture in a single layer on a large baking sheet.
- Bake for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve immediately.
Notes
- You can substitute other firm vegetables like potatoes or zucchini.
- For crispier vegetables, ensure they are not overcrowded on the pan.
