Simple, no-bake bars featuring a graham cracker crust, creamy cheesecake filling, and a sweet cherry topping.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (8 ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream, cold
- 1 (21 ounce) can cherry pie filling
Instructions
- Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until crumbs are moistened. Press mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper, leaving an overhang for easy removal. Chill crust for 15 minutes.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and vanilla extract until fully combined.
- In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
- Spread the cheesecake filling evenly over the chilled crust.
- Spoon the cherry pie filling over the cheesecake layer. Spread gently to cover the top.
- Cover the pan and refrigerate for at least 4 hours, or until firm.
- Use the parchment paper overhang to lift the bars out of the pan before cutting into squares.
Notes
- For easier cutting, chill the bars until very firm.
- You can substitute other canned fruit fillings if you prefer.
