A sparkling and refreshing cocktail perfect for New Year’s Eve celebrations, featuring the bright flavors of strawberries and basil.

- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons granulated sugar
- 1/4 cup water
- 1 bottle (750ml) chilled sparkling wine or Prosecco
- Fresh basil sprigs and strawberry slices for garnish
Instructions
- Combine sliced strawberries, basil leaves, sugar, and water in a small saucepan.
- Cook over medium heat, stirring occasionally, until the sugar dissolves and the strawberries soften, about 5-7 minutes.
- Remove from heat and let cool slightly.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing gently on the solids to extract as much liquid as possible. Discard the solids.
- Chill the strawberry-basil syrup.
- To serve, pour about 2 tablespoons of the chilled syrup into each champagne flute.
- Top with chilled sparkling wine.
- Garnish with fresh basil sprigs and strawberry slices.
Notes
- For a less sweet syrup, reduce the amount of sugar.
- Adjust the amount of syrup per glass to your taste.
- Ensure all ingredients are well chilled before serving.
