Description
A refreshing and festive non-alcoholic drink perfect for New Year’s Eve celebrations.
Ingredients

- 1 cup fresh raspberries
- 1/2 cup fresh lemon juice
- 1/4 cup granulated sugar
- 2 cups cold water
- 2 cups sparkling water or club soda
- Fresh mint sprigs for garnish
- Lemon slices for garnish
Instructions
- In a small saucepan, combine raspberries and sugar. Cook over medium heat, stirring occasionally, until raspberries break down and sugar dissolves, about 5 minutes.
- Strain the raspberry mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much juice as possible. Discard the solids.
- In a pitcher, combine the raspberry syrup, lemon juice, and 2 cups of cold water. Stir well.
- Chill the mixture in the refrigerator for at least 30 minutes.
- Just before serving, gently stir in the sparkling water or club soda.
- Pour the lemonade into glasses filled with ice.
- Garnish with fresh mint sprigs and lemon slices.
Notes
- For a sweeter drink, add more sugar to the raspberry mixture.
- For a less sweet drink, reduce the sugar or add more water.
- You can make the raspberry syrup and lemonade base ahead of time and store it in the refrigerator for up to 2 days. Add the sparkling water just before serving.
