Description
A refreshing and festive blackberry spritz with a hint of honey, perfect for New Year’s Eve celebrations.
Ingredients

- 1 cup fresh blackberries
- 2 tablespoons honey
- 1/2 cup water
- 1 bottle (750ml) chilled sparkling wine or prosecco
- 1/4 cup fresh lemon juice
- Fresh mint sprigs for garnish
- Blackberry slices for garnish
Instructions
- In a small saucepan, combine blackberries, honey, and water.
- Heat over medium heat, stirring until honey is dissolved and blackberries soften slightly.
- Remove from heat and let steep for 10 minutes.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing gently on the solids to extract as much liquid as possible. Discard solids. Let the blackberry-honey syrup cool.
- In a pitcher, combine the cooled blackberry-honey syrup and lemon juice.
- To serve, pour about 2-3 tablespoons of the blackberry mixture into each champagne flute.
- Top with chilled sparkling wine or prosecco.
- Garnish with fresh mint sprigs and blackberry slices.
Notes
- For a non-alcoholic version, use sparkling cider or club soda instead of sparkling wine.
- Adjust the amount of honey to your sweetness preference.
- Prepare the blackberry-honey syrup in advance for easier assembly.
