A refreshing and vibrant cucumber and mint drink.
Ingredients

- 1 cucumber, peeled and sliced
- 1/2 cup fresh mint leaves
- 1/4 cup lime juice
- 2 tablespoons honey or simple syrup
- 1 cup sparkling water or club soda
- Ice cubes
Instructions
- In a blender, combine the cucumber, mint leaves, lime juice, and honey or simple syrup.
- Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing to extract all the liquid.
- Fill glasses with ice cubes.
- Pour the cucumber mixture over the ice, filling each glass about halfway.
- Top with sparkling water or club soda.
- Stir gently and garnish with cucumber slices and mint sprigs, if desired.
Notes
- Adjust the amount of sweetener to your taste.
- For a stronger mint flavor, muddle the mint leaves before blending.
- You can make the cucumber mixture ahead of time and store it in the refrigerator for up to 2 days.
