Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 24 ounces cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup peanut butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup M&M’s candies
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Make the crust: Mix graham cracker crumbs and 1/4 cup melted butter. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes. Set aside to cool slightly.
  3. Make the cheesecake filling: Beat the softened cream cheese and granulated sugar until smooth. Mix in the vanilla extract. Beat in the eggs one at a time, mixing just until combined after each addition. Pour half of the cheesecake batter over the cooled crust.
  4. Bake the first layer for 15 minutes. Reduce the oven temperature to 325°F (160°C).
  5. Make the cookie dough: In a separate bowl, beat the peanut butter, flour, baking soda, salt, brown sugar, 1/2 cup softened butter, 1 egg, and 1 teaspoon vanilla extract until combined. Stir in the rolled oats, M&M’s, and chocolate chips.
  6. Drop spoonfuls of the cookie dough over the partially baked cheesecake layer. Pour the remaining cheesecake batter over the dough.
  7. Bake for 50 to 60 minutes, or until the center is almost set.
  8. Turn off the oven and prop the door open slightly. Let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and let it cool completely on a wire rack. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a water bath, place the foil-wrapped springform pan inside a larger roasting pan and fill the roasting pan with hot water halfway up the side of the springform pan before baking.
  • Use room temperature ingredients for the cheesecake batter for a smoother texture.
