- 1 cup unsalted butter, softened
- 1 cup packed dark brown sugar
- 1 large egg
- 1/4 cup molasses
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup powdered sugar (for filling)
- 1/2 cup unsalted butter, softened (for filling)
- 1/4 cup molasses (for filling)
- 1 teaspoon vanilla extract (for filling)
- 1/4 cup heavy cream (for filling)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a large bowl, cream together 1 cup butter and brown sugar until light and fluffy.
- Beat in the egg and 1/4 cup molasses until combined.
- In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
- Bake for 10 to 12 minutes. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- To make the filling, beat the 1/2 cup softened butter, powdered sugar, 1/4 cup molasses, and vanilla extract until smooth.
- Beat in the heavy cream until the filling is light and creamy.
- Once cookies are completely cool, spread or pipe the filling onto the flat side of one cookie and top with another cookie to form a sandwich.
Notes
- Chill the filling for 15 minutes before piping for easier handling.
- Store finished cookies in an airtight container.
