A recipe for small, chewy mochi balls filled with cheese.
Ingredients

- 1 cup glutinous rice flour
- 1/4 cup sugar
- 1/2 cup water
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1 tablespoon cornstarch for dusting
Instructions
- Mix glutinous rice flour and sugar in a bowl.
- Gradually add water, mixing until a smooth dough forms.
- Knead the dough briefly until uniform.
- Divide the dough into small, equal pieces.
- Flatten each piece of dough into a small circle.
- Place a small amount of mixed mozzarella and cheddar cheese in the center of the dough circle.
- Fold the dough around the cheese filling and pinch the edges to seal, forming a ball.
- Dust the balls lightly with cornstarch to prevent sticking.
- Heat oil in a deep pan to 350°F (175°C).
- Fry the mochi cheese balls in batches for 3 to 4 minutes, turning occasionally, until they are golden brown and puffed.
- Remove the balls from the oil and drain on paper towels.
- Serve warm.

- You can adjust the cheese blend based on your preference.
- Do not overcrowd the pan when frying.
