Description
A refreshing and festive champagne cocktail with mint and pomegranate.
Ingredients

- 6 ounces chilled champagne
- 2 ounces pomegranate juice
- 1 ounce white rum
- 1/2 ounce lime juice
- 1/2 ounce simple syrup
- 6–8 fresh mint leaves
- Pomegranate seeds, for garnish
- Mint sprigs, for garnish
Instructions
- Gently muddle the mint leaves in the bottom of a cocktail shaker.
- Add the rum, lime juice, simple syrup, and pomegranate juice to the shaker.
- Add ice and shake well until chilled.
- Strain the mixture into a chilled champagne flute.
- Top with chilled champagne.
- Garnish with pomegranate seeds and a sprig of mint.
Notes
- Adjust the sweetness to your preference by adding more or less simple syrup.
- Chill all ingredients before mixing for best results.
