Ingredients

  • 6 ounces chilled champagne
  • 2 ounces pomegranate juice
  • 1 ounce white rum
  • 1/2 ounce lime juice
  • 1/2 ounce simple syrup
  • 68 fresh mint leaves
  • Pomegranate seeds, for garnish
  • Mint sprigs, for garnish

Instructions

  1. Gently muddle the mint leaves in the bottom of a cocktail shaker.
  2. Add the rum, lime juice, simple syrup, and pomegranate juice to the shaker.
  3. Add ice and shake well until chilled.
  4. Strain the mixture into a chilled champagne flute.
  5. Top with chilled champagne.
  6. Garnish with pomegranate seeds and a sprig of mint.

  • Adjust the sweetness to your preference by adding more or less simple syrup.
