Description
Simple wraps filled with fresh vegetables and a light dressing.
Ingredients

- 4 large whole wheat tortillas
- 1 cup chopped cucumber
- 1 cup chopped tomato
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced red onion
- 1/4 cup Kalamata olives, halved
- 2 tablespoons fresh parsley, chopped
- For the dressing: 3 tablespoons olive oil
- For the dressing: 1 tablespoon lemon juice
- For the dressing: 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Prepare the dressing by whisking together olive oil, lemon juice, and oregano. Season with salt and pepper.
- Lay out the tortillas on a clean surface.
- Divide the cucumber, tomato, feta cheese, red onion, olives, and parsley evenly among the four tortillas.
- Drizzle the prepared dressing over the fillings on each tortilla.
- Fold in the sides of the tortilla, then roll tightly from the bottom up to form a wrap.
- Cut the wraps in half if desired and serve immediately.
Notes
- You can add hummus to the tortilla before adding the vegetables for extra flavor and texture.
- Use any type of flatbread you prefer, such as pita bread, if tortillas are unavailable.
