Description

Simple wraps filled with fresh vegetables and a light dressing.


Ingredients

  • 4 large whole wheat tortillas
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup Kalamata olives, halved
  • 2 tablespoons fresh parsley, chopped
  • For the dressing: 3 tablespoons olive oil
  • For the dressing: 1 tablespoon lemon juice
  • For the dressing: 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing by whisking together olive oil, lemon juice, and oregano. Season with salt and pepper.
  2. Lay out the tortillas on a clean surface.
  3. Divide the cucumber, tomato, feta cheese, red onion, olives, and parsley evenly among the four tortillas.
  4. Drizzle the prepared dressing over the fillings on each tortilla.
  5. Fold in the sides of the tortilla, then roll tightly from the bottom up to form a wrap.
  6. Cut the wraps in half if desired and serve immediately.

Notes

  • You can add hummus to the tortilla before adding the vegetables for extra flavor and texture.
  • Use any type of flatbread you prefer, such as pita bread, if tortillas are unavailable.
