A simple, flavorful dish combining rice and beans with Mediterranean seasonings.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup cooked brown rice
- 1/2 cup vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed chickpeas, diced tomatoes (with juice), cooked brown rice, vegetable broth, oregano, basil, salt, and pepper to the saucepan.
- Bring the mixture to a simmer.
- Reduce heat to low, cover, and cook for 10 minutes, allowing flavors to combine.
- Remove from heat and let stand for 5 minutes.
- Stir in the fresh parsley before serving.
Notes
- Serve this dish warm or at room temperature.
- You can substitute white rice for brown rice if preferred.
