Description

A simple, flavorful dish combining rice and beans with Mediterranean seasonings.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup cooked brown rice
  • 1/2 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the rinsed chickpeas, diced tomatoes (with juice), cooked brown rice, vegetable broth, oregano, basil, salt, and pepper to the saucepan.
  5. Bring the mixture to a simmer.
  6. Reduce heat to low, cover, and cook for 10 minutes, allowing flavors to combine.
  7. Remove from heat and let stand for 5 minutes.
  8. Stir in the fresh parsley before serving.

Notes

  • Serve this dish warm or at room temperature.
  • You can substitute white rice for brown rice if preferred.
