Description
A simple, low-carb alternative to traditional mashed potatoes using cauliflower and sour cream.
Ingredients

- 1 head cauliflower, cut into florets
- 2 tablespoons butter
- 1/4 cup sour cream
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Place cauliflower florets in a large pot and cover with water.
- Bring water to a boil and cook until cauliflower is very tender, about 15 minutes.
- Drain the cauliflower well.
- Return the drained cauliflower to the pot.
- Add butter, sour cream, salt, and pepper.
- Mash with a potato masher until smooth or to your desired consistency.
- Serve immediately.
Notes
- For a smoother texture, use an immersion blender or food processor after draining.
- Add a pinch of garlic powder for extra flavor.
