A sweet potato casserole topped with a crunchy maple pecan streusel.

- 3 cups cooked and mashed sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup melted butter
- 2 large eggs, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup milk
- 1 cup pecans, chopped
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup cold butter, cut into small pieces
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the mashed sweet potatoes, maple syrup, 1/4 cup melted butter, eggs, salt, cinnamon, and milk. Mix until smooth.
- Pour the sweet potato mixture into the prepared baking dish.
- In a separate medium bowl, prepare the topping. Mix the pecans, flour, and brown sugar. Cut in the 1/4 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the pecan topping evenly over the sweet potato mixture.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the casserole is heated through.
- Let the casserole cool slightly before serving.
Notes
- You can cook the sweet potatoes by boiling, steaming, or baking them until tender before mashing.
- For a richer flavor, use dark amber maple syrup.
