- 2 lbs Yukon Gold potatoes, quartered
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, whisk together the olive oil, Dijon mustard, maple syrup, salt, and pepper to make the glaze.
- Add the quartered potatoes to the bowl and toss until they are evenly coated with the glaze.
- Spread the coated potatoes in a single layer on a large baking sheet.
- Roast for 30 to 35 minutes, turning the potatoes halfway through, until they are tender and lightly browned.
Notes
- For crispier potatoes, you can increase the roasting time by 5 to 10 minutes.
- You can substitute Yukon Gold potatoes with red potatoes or small white potatoes.
