Ingredients

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Peel, seed, and cut the butternut squash into 1-inch cubes.
  3. In a large bowl, toss the squash cubes with olive oil, maple syrup, thyme, rosemary, salt, and pepper until evenly coated.
  4. Spread the squash in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 25 to 30 minutes, stirring halfway through, until the squash is tender and lightly caramelized.
  6. Serve immediately.

Notes

  • You can substitute fresh herbs for dried herbs, using 1 teaspoon of each fresh herb instead of 1/2 teaspoon dried.
