Description
Spicy and flavorful seasoned french fries inspired by Louisiana cooking.
Ingredients

- 2 large russet potatoes, cut into fries
- 4 cups vegetable oil for frying
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Soak the cut potatoes in cold water for at least 30 minutes. Drain and pat them completely dry with paper towels.
- Heat the vegetable oil in a deep pot or deep fryer to 325°F (160°C).
- Fry the potatoes in small batches until they are pale and cooked through, about 5 to 7 minutes. Remove them with a slotted spoon and drain on paper towels.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again until they are golden brown and crisp, about 2 to 4 minutes. Remove and drain well.
- In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper to create the seasoning blend.
- Place the hot fries in a large bowl. Sprinkle the seasoning blend over the fries and toss gently until the fries are evenly coated.
- Serve immediately.
Notes
- For extra crispiness, you can double-fry the potatoes as described.
- Adjust the cayenne pepper amount based on your preferred spice level.
