- 4 boneless, skinless chicken breasts, halved horizontally to make 8 thin cutlets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons lemon pepper seasoning
- 1 tablespoon fresh lemon juice
Instructions
- Place chicken cutlets between two sheets of plastic wrap. Pound them to an even 1/4-inch thickness.
- Season both sides of the cutlets with salt, black pepper, and lemon pepper seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add the cutlets to the hot skillet, working in batches if necessary to avoid overcrowding.
- Cook for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
- Remove the chicken from the skillet.
- Drizzle the cooked cutlets with fresh lemon juice before serving.
Notes
- You can substitute butter for olive oil for a richer flavor.
- Serve immediately with a side of steamed vegetables or rice.
