Description
A quick and flavorful one-pan meal featuring shrimp and asparagus tossed in lemon and garlic sauce.

- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Toss the shrimp and asparagus with 1 tablespoon of olive oil, salt, and pepper in a bowl.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the garlic to the skillet and cook for 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side until pink. Remove the shrimp and set aside.
- Add the asparagus to the skillet and cook for 4-6 minutes, stirring occasionally, until tender-crisp.
- Return the shrimp to the skillet.
- Pour in the lemon juice and add the lemon zest. Toss everything together to coat.
- Cook for 1 minute more until heated through.
- Stir in the fresh parsley before serving.
Notes
- You can substitute butter for olive oil for a richer flavor.
- For extra heat, add a pinch of red pepper flakes with the garlic.
