Description

A quick and flavorful one-pan meal featuring shrimp and asparagus tossed in lemon and garlic sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Toss the shrimp and asparagus with 1 tablespoon of olive oil, salt, and pepper in a bowl.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the garlic to the skillet and cook for 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink. Remove the shrimp and set aside.
  5. Add the asparagus to the skillet and cook for 4-6 minutes, stirring occasionally, until tender-crisp.
  6. Return the shrimp to the skillet.
  7. Pour in the lemon juice and add the lemon zest. Toss everything together to coat.
  8. Cook for 1 minute more until heated through.
  9. Stir in the fresh parsley before serving.

Notes

  • You can substitute butter for olive oil for a richer flavor.
  • For extra heat, add a pinch of red pepper flakes with the garlic.
