Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a shallow dish, combine flour, salt, and pepper. Dredge chicken pieces in the flour mixture, shaking off excess.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Return chicken to the skillet. Stir in chopped parsley.
  7. Serve immediately.

Notes

  • For a richer sauce, you can add a splash of heavy cream.
  • Serve with rice or pasta to soak up the sauce.
