Description
A simple recipe for chicken cooked with orzo pasta and bright lemon flavor.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken and cook until browned on all sides and cooked through. Remove the chicken and set aside.
- Add the onion to the skillet and cook until soft, about 5 minutes.
- Add the garlic and cook for 1 minute until fragrant.
- Stir in the orzo pasta and toast for 2 minutes.
- Pour in the chicken broth, lemon juice, and lemon zest. Bring the mixture to a simmer.
- Reduce the heat to low, cover, and cook for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally.
- Return the cooked chicken to the skillet.
- Stir in the fresh parsley. Taste and adjust seasoning with salt and pepper if needed.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- For a richer flavor, use low-sodium chicken broth.
