Quick cookies made using a boxed lemon cake mix.
Ingredients

- 1 box (15.25 oz) lemon cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a medium bowl, combine the lemon cake mix, eggs, and vegetable oil. Mix until a soft dough forms.
- Place the powdered sugar in a shallow dish.
- Scoop tablespoons of dough and roll each piece into a ball.
- Roll each dough ball completely in the powdered sugar.
- Place the coated dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes. The edges should look set.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
Notes
- For a stronger lemon flavor, add 1 teaspoon of lemon zest to the dough mixture.
- Store cooled cookies in an airtight container at room temperature.
