Ingredients

  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh or frozen blueberries

Instructions

  1. Combine rolled oats, chia seeds, milk, Greek yogurt, maple syrup, lemon zest, and lemon juice in a jar or container.
  2. Stir well until all ingredients are mixed.
  3. Gently fold in the blueberries.
  4. Cover the container and refrigerate for at least 4 hours, or preferably overnight.
  5. In the morning, stir the oats before serving. Add a splash more milk if the consistency is too thick.

Notes

  • If using frozen blueberries, they will thaw overnight and release more juice.
