Lemon Asparagus Pasta

Description

A simple pasta dish featuring fresh asparagus and bright lemon flavor.


Ingredients

  • 12 oz pasta (linguine or spaghetti)
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or vegetable broth
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant. Do not brown the garlic.
  3. Add asparagus to the skillet. Cook for 3-5 minutes until tender-crisp.
  4. Pour in white wine or broth. Let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Add the drained pasta, lemon juice, and lemon zest to the skillet. Toss to combine.
  6. Add Parmesan cheese and about 1/2 cup of the reserved pasta water. Toss continuously until a light sauce forms, adding more pasta water if needed to reach desired consistency.
  7. Season with salt and pepper. Serve immediately with extra Parmesan cheese.

Notes

  • Use fresh asparagus for the best texture and flavor.
  • For a richer sauce, add 2 tablespoons of unsalted butter with the Parmesan cheese.
