  • 1 pound Monterey Jack cheese, cubed
  • 1/2 pound pepper jack cheese, cubed
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Ranch dressing, for serving

Instructions

  1. In a bowl, combine the Monterey Jack and pepper jack cheese cubes.
  2. In a separate bowl, whisk together the flour, salt, black pepper, cayenne pepper, garlic powder, and onion powder.
  3. Dip each cheese cube into the beaten egg, then dredge it in the flour mixture, ensuring it’s fully coated.
  4. Dip the coated cheese cube back into the egg, then coat it thoroughly with panko breadcrumbs.
  5. Place the coated cheese bites on a plate and freeze for at least 30 minutes to help them hold their shape during frying.
  6. Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  7. Carefully fry the rattlesnake bites in batches, for 2-3 minutes, or until golden brown and the cheese is melted and gooey. Do not overcrowd the pot.
  8. Remove the fried bites with a slotted spoon and drain on paper towels.
  9. Serve immediately with ranch dressing for dipping.
