  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups beef broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup small pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot or Dutch oven, bring beef broth and diced tomatoes to a boil.
  3. Add carrots, celery, and onion to the pot. Reduce heat and simmer for 10 minutes.
  4. Carefully add the meatballs to the simmering soup.
  5. Stir in the pasta and cook according to package directions, or until tender.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For best results, chill the meatball mixture for 15 minutes before forming meatballs to make them easier to handle.
  • You can substitute ground turkey or a mixture of beef and pork for the ground beef.
