Description

Ingredients

  • 6 cloves garlic, minced

  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch (optional, for thickening sauce)

Instructions

  1. Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper.
  2. Set your Instant Pot to the ‘Sauté’ function. Add olive oil and let it heat up.
  3. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side. Remove the pork from the pot and set aside.
  4. Add the minced garlic to the pot and sauté for about 30 seconds until fragrant, being careful not to burn it.
  5. Pour in the chicken broth and soy sauce, scraping up any browned bits from the bottom of the pot.
  6. Return the pork tenderloin to the Instant Pot.
  7. Secure the lid and set the valve to ‘Sealing’. Cook on ‘Manual’ or ‘Pressure Cook’ on high pressure for 8 minutes.
  8. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release for any remaining pressure.
  9. Remove the pork tenderloin from the pot and let it rest for 5-10 minutes before slicing.
  10. If you want a thicker sauce, whisk together the cornstarch with 1 tablespoon of cold water. Set the Instant Pot to ‘Sauté’ and stir in the cornstarch mixture until the sauce thickens.
  11. Slice the pork tenderloin and serve with the sauce.
