A simple recipe for Huevos Rancheros served in taco form.
Ingredients

- 4 corn tortillas
- 2 large eggs
- 1/4 cup salsa roja
- 1 tablespoon vegetable oil
- 2 tablespoons refried beans
- 1/4 cup crumbled cotija cheese
- 1 tablespoon chopped cilantro
Instructions
- Heat the vegetable oil in a small skillet over medium heat.
- Fry the eggs sunny-side up. Remove from heat when whites are set and yolks are runny.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- Spread refried beans on each warm tortilla.
- Top the beans with one fried egg.
- Spoon salsa roja over the egg.
- Sprinkle with cotija cheese and cilantro.
- Serve immediately.

- Use your favorite style of salsa.
- For a spicier version, add sliced jalapeños.
