- 1 pound dried pinto beans
- 6 cups water
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup barbecue sauce
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the pinto beans and place them in a large pot with 6 cups of water.
- Bring the water to a boil, then reduce heat, cover, and simmer for 1 to 1.5 hours, or until the beans are tender. Drain off any excess liquid, reserving about 1 cup.
- In the same pot, sauté the onion until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
- Stir in the barbecue sauce, brown sugar, smoked paprika, salt, and pepper.
- Return the drained beans to the pot. Add a small amount of the reserved liquid to reach your desired consistency.
- Simmer uncovered for 15 to 20 minutes, stirring occasionally, until the sauce thickens slightly.
Notes
- For quicker cooking, soak the beans overnight before starting the recipe.
- Adjust the amount of barbecue sauce to match your taste preference.
