- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes
- 6 cups mixed greens (e.g., spinach, romaine)
- 1 cup cooked quinoa
- 1/2 cup sliced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled goat cheese (optional)
Instructions
- Cut the chicken breast into bite-sized pieces.
- In a bowl, toss the chicken with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat. Cook the chicken until browned and cooked through, about 6-8 minutes.
- While the chicken cooks, combine honey, apple cider vinegar, and red pepper flakes in a small saucepan. Heat gently until combined, stirring constantly. Do not boil.
- Pour the hot honey mixture over the cooked chicken and toss to coat. Remove from heat.
- Assemble the bowls: Divide the mixed greens and cooked quinoa between two bowls.
- Top the greens and quinoa with the hot honey chicken, cucumber slices, and cherry tomatoes.
- Sprinkle with goat cheese, if using.
Notes
- You can substitute maple syrup for honey for a slightly different flavor profile.
- Use your favorite grain instead of quinoa, such as brown rice or farro.
- Adjust the red pepper flakes amount to control the heat level of the honey sauce.
