Description
Simple recipe for grilled chicken and vegetable skewers coated in a sweet and savory honey barbecue sauce.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup barbecue sauce
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for at least 30 minutes if using.
- In a small bowl, whisk together the barbecue sauce, honey, soy sauce, apple cider vinegar, smoked paprika, and garlic powder to make the glaze.
- Place the chicken cubes in a bowl and pour half of the glaze over the chicken. Toss to coat and let it marinate for 20 minutes. Reserve the remaining glaze for basting.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken, red pepper, green pepper, and onion pieces alternately onto the skewers.
- Place the kabobs on the preheated grill. Cook for 10 to 12 minutes, turning occasionally.
- During the last 5 minutes of cooking, brush the kabobs with the reserved glaze every few minutes until the chicken is cooked through and the glaze is slightly caramelized.
- Remove from the grill and serve immediately.
Notes
- If you prefer, you can substitute chicken thighs for breasts.
- You can use any combination of firm vegetables you like, such as zucchini or mushrooms.
