Honey BBQ Chicken Kabobs

Description

Simple recipe for grilled chicken and vegetable skewers coated in a sweet and savory honey barbecue sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup barbecue sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. In a small bowl, whisk together the barbecue sauce, honey, soy sauce, apple cider vinegar, smoked paprika, and garlic powder to make the glaze.
  3. Place the chicken cubes in a bowl and pour half of the glaze over the chicken. Toss to coat and let it marinate for 20 minutes. Reserve the remaining glaze for basting.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken, red pepper, green pepper, and onion pieces alternately onto the skewers.
  6. Place the kabobs on the preheated grill. Cook for 10 to 12 minutes, turning occasionally.
  7. During the last 5 minutes of cooking, brush the kabobs with the reserved glaze every few minutes until the chicken is cooked through and the glaze is slightly caramelized.
  8. Remove from the grill and serve immediately.

Notes

  • If you prefer, you can substitute chicken thighs for breasts.
  • You can use any combination of firm vegetables you like, such as zucchini or mushrooms.
