Ingredients

  • 1 cup crisp rice cereal
  • 1/2 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 cup mix-ins (e.g., chocolate chips, dried fruit)

Instructions

  1. Line an 8×8 inch pan with parchment paper, leaving an overhang.
  2. In a large saucepan, combine peanut butter, honey (or maple syrup), and brown sugar over medium heat. Stir until the sugar dissolves and the mixture is smooth. Remove from heat.
  3. Stir in the vanilla extract.
  4. In a separate large bowl, combine the rolled oats and crisp rice cereal.
  5. Pour the warm peanut butter mixture over the oat mixture. Stir well until everything is evenly coated.
  6. Fold in your chosen mix-ins.
  7. Press the mixture firmly and evenly into the prepared pan. Use a piece of parchment paper on top to help press it down tightly.
  8. Refrigerate for at least 2 hours, or until firm.
  9. Lift the bars out using the parchment overhang and cut into desired bar sizes.
