Description
This festive and easy eggnog recipe is perfect for holiday gatherings. It’s a classic creamy drink that everyone will enjoy.
Ingredients
Scale
- 6 large eggs, separated
- 3/4 cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon vanilla extract
- Pinch of salt
- Optional: 1/2 cup brandy, rum, or bourbon
Instructions
- In a large bowl, whisk egg yolks with 1/2 cup sugar until light and fluffy.
- In a medium saucepan, combine milk, heavy cream, and nutmeg. Heat over medium heat until simmering, stirring occasionally. Do not boil.
- Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Do not boil.
- Remove from heat and stir in vanilla extract. If using alcohol, stir it in now.
- Pour the eggnog into a clean bowl and cover with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 3 hours or overnight.
- Just before serving, in a separate clean bowl, beat egg whites with the remaining 1/4 cup sugar and salt until stiff peaks form.
- Gently fold the beaten egg whites into the chilled eggnog.
- Serve cold, garnished with extra nutmeg if desired.
Notes
- For a non-alcoholic version, simply omit the spirits.
- You can make this ahead and store it in the refrigerator for up to 3 days.
- Adjust the amount of nutmeg to your preference.
