Description

Ingredients

  • 6 large eggs, separated
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1/2 cup brandy, rum, or bourbon

Instructions

  1. In a large bowl, whisk egg yolks with 1/2 cup sugar until light and fluffy.
  2. In a medium saucepan, combine milk, heavy cream, and nutmeg. Heat over medium heat until simmering, stirring occasionally. Do not boil.
  3. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Do not boil.
  5. Remove from heat and stir in vanilla extract. If using alcohol, stir it in now.
  6. Pour the eggnog into a clean bowl and cover with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 3 hours or overnight.
  7. Just before serving, in a separate clean bowl, beat egg whites with the remaining 1/4 cup sugar and salt until stiff peaks form.
  8. Gently fold the beaten egg whites into the chilled eggnog.
  9. Serve cold, garnished with extra nutmeg if desired.

Notes

  • For a non-alcoholic version, simply omit the spirits.
  • You can make this ahead and store it in the refrigerator for up to 3 days.
  • Adjust the amount of nutmeg to your preference.
