- 1 cup chocolate cookie crumbs
- 1/4 cup melted butter
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup Kahlua
- 1/4 cup vodka
- 1/4 cup Irish cream liqueur
- Chocolate syrup for drizzling
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Combine chocolate cookie crumbs and melted butter. Press into the bottom of a 9-inch pie dish. Chill for 30 minutes.
- In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, pumpkin pie spice, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture.
- Stir in Kahlua, vodka, and Irish cream liqueur until well combined.
- Pour the mixture over the cookie crust.
- Chill for at least 4 hours, or overnight, until firm.
- Before serving, drizzle with chocolate syrup, top with whipped cream, and garnish with chocolate shavings.
Notes
- For a non-alcoholic version, replace the liqueurs with 1/2 cup milk and 1/4 cup strong brewed coffee.
- You can make individual servings in small glasses or ramekins.
