Ground Turkey Black Bean Enchiladas

Description

A recipe for baked enchiladas filled with ground turkey and black beans, topped with sauce and cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup enchilada sauce (red or green)
  • 8 corn or flour tortillas
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up, until browned. Drain any excess fat.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, cumin, salt, and pepper. Cook for 1 minute until fragrant.
  5. Remove the skillet from the heat. Stir in the rinsed and drained black beans.
  6. Spread about 1/4 cup of enchilada sauce in the bottom of the prepared baking dish.
  7. Warm the tortillas briefly in the microwave or a dry skillet to make them pliable.
  8. Spoon about 1/4 cup of the turkey and bean mixture down the center of each tortilla. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.
  9. Pour the remaining enchilada sauce evenly over the rolled tortillas.
  10. Sprinkle the shredded cheese over the top.
  11. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the dish is heated through.

Notes

  • If using flour tortillas, you may want to bake them for 5 minutes before filling to prevent tearing.
  • For a spicier flavor, add a pinch of cayenne pepper to the meat mixture.
