A simple one-pan meal combining ground beef, rice, and vegetables.
Ingredients

- 1 pound ground beef
- 1 medium onion, chopped
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup frozen mixed vegetables
Instructions
- Brown the ground beef and onion in a large skillet over medium heat. Drain off any excess fat.
- Stir in the uncooked rice, beef broth, diced tomatoes (with juice), salt, pepper, and garlic powder.
- Bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and simmer for 15 minutes.
- Stir in the frozen mixed vegetables.
- Cover and cook for another 5 to 10 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes before serving.
Notes
- You can substitute brown rice, but adjust the cooking time as needed.
- Add a dash of Worcestershire sauce for deeper flavor.
