Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Grill the salmon for 4 to 6 minutes per side, until cooked through.
  4. While the salmon cooks, prepare the salsa. Combine the diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Mix gently.
  5. Place the grilled salmon on plates and top each fillet with a portion of the mango salsa.

Notes
