A refreshing rum punch featuring grilled pineapple for a smoky sweetness.
Ingredients

- 1 whole pineapple
- 1 cup dark rum
- 1/2 cup white rum
- 1/2 cup lime juice
- 1/4 cup grenadine
- 1/4 cup simple syrup
- Ice
- Mint sprigs for garnish
Instructions
- Preheat grill to medium-high heat.
- Peel, core, and slice the pineapple into 1-inch rings.
- Grill pineapple slices for 3-4 minutes per side, until charred and slightly softened.
- Let grilled pineapple cool completely.
- Cut grilled pineapple into chunks.
- In a large pitcher, combine grilled pineapple chunks, dark rum, white rum, lime juice, grenadine, and simple syrup.
- Stir well to combine.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Fill glasses with ice.
- Pour rum punch over ice.
- Garnish with mint sprigs and a grilled pineapple slice, if desired.
Notes
- Adjust sweetness to your preference by adding more or less simple syrup.
- You can substitute white rum with a flavored rum.
- For a non-alcoholic version, omit the rum and add sparkling water or club soda.
