A refreshing cooler with grilled pineapple and a hint of jalapeño spice, perfect for a BBQ.
Ingredients

- 4 cups fresh pineapple chunks
- 1 jalapeño pepper, halved and seeded
- 1/4 cup lime juice
- 1/4 cup simple syrup (equal parts sugar and water, heated until dissolved)
- 4 cups sparkling water or club soda
- Ice
- Lime slices and mint sprigs for garnish
Instructions
- Preheat grill to medium-high heat.
- Grill pineapple chunks and jalapeño halves for 3-5 minutes per side, until lightly charred.
- Let grilled pineapple and jalapeño cool slightly.
- In a blender, combine grilled pineapple, grilled jalapeño, lime juice, and simple syrup. Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing to extract all the liquid.
- Add sparkling water or club soda to the pitcher and stir gently.
- Fill glasses with ice and pour the cooler over ice.
- Garnish with lime slices and mint sprigs.
Notes
- Adjust the amount of jalapeño based on your desired level of spice.
- For a spicier drink, leave some or all of the jalapeño seeds in.
- You can make the pineapple and jalapeño mixture ahead of time and store it in the refrigerator.
