Smoky grilled eggplant slices tossed in a zesty garlic vinaigrette.
Ingredients

- 2 medium eggplants, sliced 1/2 inch thick
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your grill to medium-high heat.
- Brush eggplant slices with 2 tablespoons of olive oil. Grill for 4-5 minutes per side, until tender and grill marks appear.
- While the eggplant grills, whisk together the remaining 2 tablespoons of olive oil, minced garlic, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl.
- Place the grilled eggplant in a serving dish.
- Pour the garlic vinaigrette over the warm eggplant.
- Garnish with fresh parsley before serving.
Notes
- You can also roast the eggplant in the oven at 400°F (200°C) for 20-25 minutes, flipping halfway through.
- Adjust the amount of garlic to your preference.
