Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups chopped spinach
  • 1 cup chopped kale
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh basil leaves
  • 1/2 cup plain Greek yogurt (or dairy-free alternative)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth. Bring to a simmer.
  5. Add spinach and kale. Cook until wilted, about 5 minutes.
  6. Remove the pot from the heat.
  7. Stir in parsley and basil.
  8. Carefully transfer the soup mixture to a blender or use an immersion blender. Blend until smooth.
  9. Return soup to the pot if necessary. Stir in Greek yogurt until fully combined.
  10. Season with salt and pepper. Heat gently before serving.

Notes

  • For a thinner soup, add a little more broth or water until you reach your desired consistency.
  • If you prefer a richer flavor, use chicken broth instead of vegetable broth.
