Description
A simple, fresh green vegetable soup.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups chopped spinach
- 1 cup chopped kale
- 1/2 cup fresh parsley leaves
- 1/4 cup fresh basil leaves
- 1/2 cup plain Greek yogurt (or dairy-free alternative)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth. Bring to a simmer.
- Add spinach and kale. Cook until wilted, about 5 minutes.
- Remove the pot from the heat.
- Stir in parsley and basil.
- Carefully transfer the soup mixture to a blender or use an immersion blender. Blend until smooth.
- Return soup to the pot if necessary. Stir in Greek yogurt until fully combined.
- Season with salt and pepper. Heat gently before serving.
Notes
- For a thinner soup, add a little more broth or water until you reach your desired consistency.
- If you prefer a richer flavor, use chicken broth instead of vegetable broth.
