Description
A simple casserole featuring chicken, rice, green chiles, and cheese.

- 2 cups cooked chicken, shredded
- 1 (10.5 ounce) can cream of chicken soup
- 1 (10.5 ounce) can cream of mushroom soup
- 1 cup sour cream
- 1 cup water
- 1 (4 ounce) can diced green chiles, drained
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 cups cooked white rice
- 2 cups shredded Monterey Jack cheese
- 1/2 cup crushed tortilla chips (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, water, green chiles, onion powder, and garlic powder. Mix well.
- Stir in the cooked rice and half of the shredded cheese until everything is evenly coated.
- Spread the mixture into the prepared baking dish.
- Sprinkle the remaining cheese over the top of the casserole.
- Bake for 25 minutes.
- Remove from the oven and sprinkle the crushed tortilla chips over the cheese layer.
- Return to the oven and bake for another 5 minutes, or until the topping is lightly browned and the casserole is bubbly.
- Let stand for 5 minutes before serving.
Notes
- You can use leftover rotisserie chicken for quick preparation.
- Adjust the amount of green chiles based on your preference for heat.
