Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water or broth
  • 2 cups cooked white rice
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomato
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add onion and cook until soft, about 5 minutes.
  4. Stir in garlic, oregano, thyme, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in water or broth. Bring to a simmer and cook until the liquid is mostly absorbed, about 5 minutes.
  6. Divide cooked rice among serving bowls.
  7. Top the rice with the seasoned ground turkey mixture.
  8. Garnish each bowl with cucumber, tomato, and feta cheese.
  9. Drizzle with fresh lemon juice before serving.

Notes

  • You can substitute brown rice for white rice.
  • Add a spoonful of plain Greek yogurt for extra creaminess.
