A simple and quick rice bowl featuring seasoned ground turkey with Greek flavors.
Ingredients

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water or broth
- 2 cups cooked white rice
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomato
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic, oregano, thyme, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in water or broth. Bring to a simmer and cook until the liquid is mostly absorbed, about 5 minutes.
- Divide cooked rice among serving bowls.
- Top the rice with the seasoned ground turkey mixture.
- Garnish each bowl with cucumber, tomato, and feta cheese.
- Drizzle with fresh lemon juice before serving.
Notes
- You can substitute brown rice for white rice.
- Add a spoonful of plain Greek yogurt for extra creaminess.
