A refreshing and aromatic cocktail featuring grapefruit, thyme, gin, and a homemade herbal syrup.

- 1/2 cup fresh grapefruit juice
- 2 ounces gin
- 1 ounce thyme simple syrup
- 2–3 ounces sparkling water or club soda
- Fresh thyme sprigs, for garnish
- Grapefruit slices, for garnish
Instructions
- Prepare the thyme simple syrup: Combine 1 cup water, 1 cup sugar, and 6-8 sprigs of fresh thyme in a saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and let steep for 20-30 minutes. Strain and let cool completely.
- Fill a glass with ice.
- Add grapefruit juice, gin, and thyme simple syrup to the glass.
- Stir gently to combine.
- Top with sparkling water or club soda.
- Garnish with fresh thyme sprigs and grapefruit slices.
Notes
- Adjust the amount of thyme simple syrup to your sweetness preference.
- You can substitute vodka or white rum for the gin.
- Make a larger batch of thyme simple syrup to have on hand for future cocktails.
