Ingredients

  • 23 ounces sparkling water or club soda
  • Fresh thyme sprigs, for garnish
  • Grapefruit slices, for garnish

Instructions

  1. Prepare the thyme simple syrup: Combine 1 cup water, 1 cup sugar, and 6-8 sprigs of fresh thyme in a saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and let steep for 20-30 minutes. Strain and let cool completely.
  2. Fill a glass with ice.
  3. Add grapefruit juice, gin, and thyme simple syrup to the glass.
  4. Stir gently to combine.
  5. Top with sparkling water or club soda.
  6. Garnish with fresh thyme sprigs and grapefruit slices.
