Simple recipe for chewy gingerbread cookie bars.

- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1/2 cup molasses
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- For Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and brown sugar until smooth.
- Beat in the egg and molasses until combined.
- In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the dough evenly into the prepared baking pan.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan on a wire rack.
- While cooling, prepare the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Spread the glaze evenly over the cooled bars. Cut into squares before serving.
Notes
- For a stronger ginger flavor, increase the ground ginger to 1 1/2 teaspoons.
- You can store leftovers in an airtight container at room temperature for up to 4 days.
