A refreshing non-alcoholic cocktail featuring the sweet and spicy flavors of ginger and peach.
Ingredients

- 1 ripe peach
- 1-inch piece fresh ginger
- 1/4 cup water
- 2 tablespoons sugar
- 1 cup ice
- 1 cup club soda or sparkling water
- Fresh mint sprigs for garnish (optional)
Instructions
- Peel and slice the peach. Peel and thinly slice the ginger.
- In a small saucepan, combine the peach slices, ginger slices, water, and sugar.
- Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat and let the mixture steep for 15 minutes.
- Strain the syrup through a fine-mesh sieve into a glass. Discard the solids.
- Fill a glass with ice.
- Pour the ginger-peach syrup over the ice.
- Top with club soda or sparkling water.
- Stir gently.
- Garnish with fresh mint sprigs, if desired.
Notes
- Adjust the amount of ginger for desired spiciness.
- Use frozen peaches for a colder drink.
- Make a larger batch of syrup and store in the refrigerator for future use.
