- 1 cup cooked quinoa
- 1 medium zucchini, grated and squeezed dry
- 1/2 cup shredded cheddar cheese
- 1/4 cup all-purpose flour
- 2 cloves garlic, minced
- 1 large egg, beaten
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- In a medium bowl, combine the cooked quinoa, grated zucchini, shredded cheese, flour, minced garlic, beaten egg, salt, and pepper. Mix well until all ingredients are incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the quinoa mixture into the hot skillet, flattening them slightly with the back of the spoon to form fritters.
- Cook for 3-4 minutes per side, until golden brown and cooked through.
- Remove the fritters from the skillet and drain on a paper towel-lined plate.
- Serve warm.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the mixture.
- Serve with your favorite dipping sauce, such as sour cream or a garlic aioli.
