Ingredients

  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1 large egg, beaten

  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. In a medium bowl, combine the cooked quinoa, grated zucchini, shredded cheese, flour, minced garlic, beaten egg, salt, and pepper. Mix well until all ingredients are incorporated.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Drop spoonfuls of the quinoa mixture into the hot skillet, flattening them slightly with the back of the spoon to form fritters.
  4. Cook for 3-4 minutes per side, until golden brown and cooked through.
  5. Remove the fritters from the skillet and drain on a paper towel-lined plate.
